Another week of meal plans! My favorite part of this week is breakfast for dinner on Friday… brinner makes my heart singggg! This week's theme was all about penny pinching. I'm determined to stick to our grocery budget, but we needed to stock up on some of our snacks and random odds and ends from Costco. I was able to offset that by shopping the leftovers I had in my pantry and freezer, and then trying to plan meals with mostly the same proteins so we could buy it in bulk and save money. Yay!

 

(Lunches are planned and linked too - I always plan them so that I can stick to clean whole foods. I don’t always eat them on the days I map them out, but at least they’re prepped and ready!)

 

Here's what we're eating this week!

Sunday: Chicken and Veggies | Burgers + Buffalo Potato Wedges

We had leftover potatoes and I loved these wedges a few weeks ago. I've been craving them!

Monday: Buffalo Wraps | Autumn Breakfast Skillet

Tuesday: BBQ Chicken Salad | Taco Tuesday

//Nothing fancy - grilled chicken and raw veggies on butter lettuce with Noble Made BBQ Sauce as dressing! Taco Tuesday is just taco meat with a build your own bowl type of vibe!

 

Wednesday: Buffalo Chicken Salad | Poblano Pepper Hash

Reusing more buffalo chicken from Monday, I make a big batch on Sundays! And the poblano pepper hash was leftover from a few weeks ago. I had frozen it from leftovers, and will serve it over rice! Pretty much a free meal! Its a recipe from the same cookbook I linked above.

 

Thursday: Kid Charcuterie and Chicken Salad | Pizza Nite

Kid charcuterie aka arranging meat, cheese, pretzels and fruit on a tray. Piper loves to pick these out so I do one now and then for her! Thursdays are easy to plan because we do pizza and movie night every Thursday. We takes turns and rotate through our family for who gets to pick the movie. Its so fun!

 

Friday:  BBQ Chicken Salad | Breakfast Sheet Pan

(I found chicken and apple sausage in the freezer, so more freezer inspiration!)
